Rice and Peas
3 cups rice
1 cup red peas (red kidney beans)
Thyme
1 cup coconut milk
2 tablespoons pimento (allspice)
Salt (to taste)
1 clove garlic
2 stalks scallion
¼ teaspoon black pepper
1 qt. hot water
1 whole Scotch Bonnet Pepper

Place peas in a saucepan and cook until they are medium hard. Add the clove of garlic slightly bruised. Cook until peas are tender, but not overcooked. Add scallion or leeks, pepper, thyme, salt, black pepper,rice, and coconut milk, adding more water if necessary in order to boil rice properly. Cook over medium heat, covered, stirring once or twice until rice is well cooked.
Note: The pepper is for flavor only and should be left intact.

Curried Goat
4 tsp cooking oil
1 lb goat meat
1 large onion, peeled and finely sliced
2 tsp allspice (ground)
1 tsp wine vinegar
6 tsp curry powder
salt to taste
½ tsp cayenne pepper
¼ bay leaf
¼ tsp ginger crushed
2 cloves of garlic crushed


Season meat with curry, salt, cayenne pepper, allspice and salt.
Brown meat quickly in oil. Add 1½ cup of water with all other ingredients. Cook for 2 hours until meat is tender.

Jamaican Rum Cake
2 cups brown sugar
1 lb. butter
4 cups flour
½ cup bread crumbs
6 eggs
1 ½ cups (soaked) mixed fruit
2 tsp. cinnamon
2 tsp. nutmeg
2 tsp. mixed spice
2 tsp. vanilla
2 tsp. rosewater
2 tsp. Angostura Bitters
¼ cup browning
1 ½ tsp baking powder

(optional)
1 cup orange juice
1 cup Red Label (or port) wine
¼ cup white rum

Cream butter and sugar until light and fluffy.
Add eggs, cream well.
Add fruit and browning
Add flour, baking powder and mixed spice (these ingredients should have been pre-sifted together)
Add white rum and wine
Mix all ingredients together
Bake at 350 degrees F for one hour (or until cake leaves side of tin)
