Jerk Chicken |
| 1 Chicken, cut in pieces 5 stalks Scallions 3 sprigs fresh Thyme Salt 3 teaspoons Pimento (Allspice) 2 Scotch Bonnet Peppers 1 teaspoon Cayenne Pepper 1/2 teaspoon Cinnamon 1/2 cup Orange Juice 3 teaspoons Soy Sauce 1/2 cup White Vinegar 3 tablespoon Lime Juice 2 onions, chopped 1/2 cup Brown Sugar Mix all the ingredients together (except for the chicken) into a thick paste. Rub the mixture into the chicken parts. Allow the meat to marinade overnight, or at least for a couple of hours. Grill the chicken until cooked through. Do not place directly over fire, but rather cook slowly over a low charcoal fire. |
