Brown Stew Casserole Chicken
3 Roasting Chickens
3 1bs Flour
8 oz Turkey Bacon
3 large Red Onions
3 large Garlic Cloves
1 ½ oz Butter
3 tbls Olive Oil
22 strips dried Orange Peel
2 cloves Garlic
2 Bay Leaves
2 sprigs Parsley
2 sprigs Thyme
5 oz Red Wine


1. Line an 11-inch square cake tin with greased paper
2. Put all ingredients into a mixer until you have a soft drippy batter
3. Add onions. Sautee until onions are soft and transparent. Remove onions from casserole.
4. Add chicken to casserole over medium heat turning from time to time until chicken is golden brown.
5. Add bacon and onions to casserole. Add garlic cloves, dried orange peel, cloves and other sprigs garnish and salt and freshly ground black pepper.
6. Cook for 45 minutes or until chicken is tender.
7. Pour the wine into a small saucepan and cook over a high heat until the wine is reduced to about 4 tablespoons. Stir wine into casserole and serve.
